Eggs Rancheros with Guacamole
2 teaspoons extra virgin olive oil
4-6 plum tomatoes
1 small onion
1/2-1 jalapeño, seeded and deveined, minced
1 teaspoon minced garlic
4 eggs
8 corn tortillas, warmed
4 tablespoons Cabo Fresh Guacamole, more for serving

Heat olive oil in a medium fry pan over medium heat, add onion, jalapeño, and garlic and sauté for about 3 minutes, add tomatoes and let cook down to form a nice chunky sauce. Spoon the mixture into a bowl. Wipe out the pan and fry eggs 2 at a time cooking to over easy or medium. Heat tortillas (I like to warm over a gas flame holding the tortilla with a pair of tongs), put 2 on each plate over lapping, spread the top one with your favorite variety Cabo Fresh Guacamole, put egg on top of each tortilla and spoon tomato mixture over top and serve with more guacamole.
