Guacamole Salad Bowl with Brown Rice and Beans
2 cups cooked brown rice
2 cups black beans
1/2 cup Cabo Fresh Guacamole, Spicy works well here
1/2 Greek yogurt, plain or sour cream
1 cup fresh corn kernels or fire roasted frozen corn (thawed)
1/2-1 cup diced cucumber
1/2-1 cup diced red pepper
1/2 cup chopped black or kalamata olives (optional)
1/2 cup diced red onion or scallions
2-3 cups romaine lettuce, chopped
1 cup Mexican blend cheese, feta, of queso fresco
1 large tomato, chopped or cherry tomatoes
Scallions or more red onion for top
4 dollops of your favorite Cabo Fresh Guacamole

Mix the yogurt and guacamole together in a small bowl.
In each of 4 shallow bowls or on a large plate layer 1/2 cup brown rice, 1/2 cup black beans, 1/4 cup guacamole mixture, 1/4 cup corn, cucumber, red pepper, olives if using, and red onion or scallions. Top with the lettuce, cheese, tomato, onions and a dollop of guacamole.
