Romaine, Citrus, and Jicama Salad with Guacamole Goddess Dressing
1 head romaine lettuce, about 4-5 cups chopped
1 small jicama, peeled, and cut into match stick size (julienned)
1 small red onion, cut in half, peeled, cored removed, and thinly sliced
1 navel orange, ends cut off, peel to remove white pith, and using a sharp knife cut between the membranes over a small bowl to catch juice
1 ruby red or oro blanco grapefruit , use same procedure as orange
4 ounces queso fresco or other white cheese, such as feta
4- 6 ounce pieces grilled salmon or chicken breast, optional
1/4 cup or more Guacamole Goddess Dressing with 1 tablespoon of reserved juice from orange (recipe in Our Favorites category)

In a large bowl combine lettuce, jicama, red onion, and orange and grapefruit segments.
Toss with dressing. Divide salad among 4 salad plates or shallow bowls, top with salmon or chicken if using, and crumbled cheese and pumpkin seeds. Serve with additional dressing.
