Chocolate Guacamole Cupcakes with Spicy Chocolate Guacamole Glaze
Ingredients for cupcakes:
4 ounces unsweetened chocolate, broken into pieces
1/2 cup boiling water
1/4 cup Cabo Fresh Organic Mild or Mild Guacamole
1/4 cup low fat Greek yogurt
1 1/2 cups sugar
3 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 cup buttermilk
1 teaspoon pure vanilla extract

Ingredients for glaze:
3 tablespoons Cabo Fresh Spicy Guacamole
1 1/2 cups powdered sugar
1/4 cup cocoa powder
1/2 teaspoon pure vanilla extract
2-3 tablespoons milk

Instructions for cupcakes:
Preheat oven to 350 degree F. Line 2 cupcakes pans with 24 cupcake papers.
Pour the boiling water over the chocolate and stir until the chocolate melts. Cream the Cabo Fresh Guacamole, yogurt, and sugar using an electric mixer. Add the eggs one at a time, mixing after each addition; add in the melted chocolate, mix to combine. Combine the flour and baking soda in medium bowl; add to creamed mixture alternately with the buttermilk and vanilla, mixing until batter is smooth. Pour the batter in lined cupcake pans filling about 2/3 full. Bake for 20 to 25 minutes, until a toothpick inserted comes out clean or cake springs back when lightly touched. Cool on wire rack.

Instructions for glaze:
Mix all the ingredients together in medium bowl until a smooth glaze forms. Adjust amount of milk and sugar to get desired consistency. Spoon the glaze onto cooled cupcakes.
