Guacamole Roasted Halibut
Ingredients:
4 (6 ounce) pieces halibut
kosher or sea salt and freshly ground black pepper
1/2 cup Cabo Fresh Authentic Guacamole
1/2 cup low fat plain Greek yogurt
2 teaspoons Dijon mustard
2 tablespoons minced shallots
2 teaspoons drained and rinsed capers
chopped cilantro (optional)

Directions:
Preheat oven to 425 degrees F.
Line a sheet pan with parchment paper or you can use ovenproof glass baking dish (no need to line).
Place filets on the sheet pan. Sprinkle with salt and black pepper. Combine Cabo Fresh Authentic Guacamole, yogurt, mustard, shallots, and capers in a small bowl. Spoon the sauce over the fish covering completely. Bake for 12 to 15 minutes, depending on thickness of the fish, until the fish is barely done. Do not overcook it! Serve hot or room temperature with sauce spooned over top, sprinkle with chopped cilantro if desired. Great with roasted new potatoes!
